flourless six ingredient peanut butter chocolate chip cookies (gf)
Who doesn't love a good cookie? I have a super sweet tooth that I have a hard time controlling and adhering to a paleo-esque lifestyle. These cookies can be made paleo, although I usually use real sugar and enjoy them as a special treat.
Ingredients:
- 1 cup peanut butter (use Jif for the treat version, organic all-natural for paleo)
- 3/4 cup sugar (regular white sugar for treat version, coconut sugar for paleo)
- 1 large egg
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Chocolate chips to preference (cacao nibs for paleo)
Directions:
Combine all ingredients in a large bowl minus the chocolate chips. Fold those in last. These don't require a mixer, just a good ole wooden spoon and a little elbow grease.
Place rounded teaspoons on an ungreased cookie sheet and bake at 350 for 11-13 minutes. Once the edges are set they are good to go. Beware of overcooking because they come out tasting a little like burnt peanuts if you do.
Let cool for 3 minutes before removing from cookie sheet, they can be a little crumbly. Remove from sheet and let dry on cookie rack for 5-10 minutes.
They will be a hit at any event and no one will ever know they are gluten free! Enjoy :)
